This is a perfect way to use up those final tomatoes of the season that have no chance of ripening.
Ingredients
- 2 or 3 large green (unripe) tomatoes
- 1/2 cup flour
- 1/4 cup milk
- 2 lightly beaten eggs
- 2/3 cup panko or breadcrumbs
Instructions
- Cut the tomatoes into 1 cm (1/2 inch) slices
- Grind on a good dose of salt and pepper
- Let them stand for 15 minutes.
- Put the milk into one wide bowl
- Put the flour into another wide bowl
- Put the eggs into a third wide bowl
- Put the panko into a fourth wide bowl
- Heat oil in two frying pans
- Then coat the slices in milk, then flour, then eggs, then panko and put straight into hot oil. Turn the heat down a little to stop the tomatoes from burning. They're done when they are golden brown.
- Delicious served with fried eggs, ideally from your own hens!
