Do you need a way to use up those home-grown green tomatoes that have no chance of ripening as the days get shorter? Well here you go. They make a great addition to your Sunday brunch.

This is a perfect way to use up those final tomatoes of the season that have no chance of ripening.

Ingredients

  • 2 or 3 large green (unripe) tomatoes
  • 1/2 cup flour
  • 1/4 cup milk
  • 2 lightly beaten eggs
  • 2/3 cup panko or breadcrumbs

Instructions

  1. Cut the tomatoes into 1 cm (1/2 inch) slices
  2. Grind on a good dose of salt and pepper
  3. Let them stand for 15 minutes.
  4. Put the milk into one wide bowl
  5. Put the flour into another wide bowl
  6. Put the eggs into a third wide bowl
  7. Put the panko into a fourth wide bowl
  8. Heat oil in two frying pans
  9. Then coat the slices in milk, then flour, then eggs, then panko and put straight into hot oil. Turn the heat down a little to stop the tomatoes from burning. They're done when they are golden brown.
  10. Delicious served with fried eggs, ideally from your own hens!
